Recipes for DE II Thread

Hi girls!

Ok, I'm starting us out here...I hope it's OK to start a thread that is so "off topic"? But, I'd say that cooking is definitely theraputic and supportive, right?

Chilicious

2 TBSP olive oil
3 C shredded cooked chicken
1 bag frozen onions
1 ˝ C frozen corn
5 garlic cloves minced
1 can chopped green chili’s
juice of 1 lime
2 tsp cumin
1 TBSP chili powder
3 cans white beans drained and rinsed
1 can black beans drained and rinsed
4 cans chicken broth
˝ C chopped cilantro
shredded jack cheese
lime wedges
tortilla chips

Cook chicken, cool, shred by hand
Sautee onions and green chilis, add garlic, then spices

Put above into crockpot (or continue all in big pot on stove)
Add in broth, beans, corn, lime, and cilantro
Cook on low all day

Serve with lime wedges, jack cheese, avocado, more cilantro, and tortilla chips.

LGB-First that looks so amazing, my dh ordered me to email him the recipe and we can print it out and make it!

Second- great idea- I will add a recipe when I have more than one wide awake brain cell

That recipe sounds so good!! Going to have to try it out.

March 24, 2005- had a bone marrow transplant from my sister after two more rounds of chemo. Side effect of treatment is premature ovarian failure/elvated FSH
January 2009- Declared cured given green light on egg donor ivf.
October 2009- 2 embryos trasferred ended in chemical pregnancy. 3 frosties left.
November 19, 2009- Start Acupuncture
November 27, 2009- Start Estrace
December 10, 2009- Lining Check
December 11, 2009- Start PIO
December 15, 2009- FET of 3 (hopefully) frosties

LGB- I made your recipe for Chilicious tonight for dinner and oh boy was it is tasty!!!! DH loved it and so did I. I will be keeping this one for sure. Thank you for sharing.

Butterfly-YIPPEE! I am so glad you made it! It makes a ton so we usually eat it for 2-3 meals and then I even freeze what's leftover for a quick meal for just me or DH. It's a great Fall/Winter dish!

Ok, so since I am home every single minute of the day right now...I am watching the Food Network a lot. I LOVE the Paula Dean show and whenever I see something I think we'd like, I look up the recipe on their website.

The other night, DH made:
Salmon Croquettes
Cranberry Coleslaw
They were both so good!

Let me know if anyone wants those recipes!
And I have ALOT more where that comes from...I am a big appetizer girl so I have tons of appetizer recipes!

LGB- Yeah it did make a ton! We have lots of left overs. Good idea about freezing it. I love the Food Network!! I would love to try those recipes you mentioned! I love cooking as does DH.

Easy One/call Me A Cheater

This is cheating but so good its ok...
Snickers Cookies

1 big batch roll of choc. chip cookie dough
1 bag of minature /snack size snickers

spray 13x9x2 pan
press cookie dough in bottom of pan
cut snickers into quarters - sprinkle on top of dough
bake 350 15-18 minutes

share with friends and they will all LOVE it

Mexican Nacho Dip

2 cans refried beans
8 oz. jar taco sauce
1 envelope powdered taco seasoning mix
16 oz. sour cream
8 oz. grated cheddar cheese (or feel free to use more)
Plain tortilla chips or 'scoops'

Mix the first 3 ingredients. Pour into 9x13 inch pan. Spread sour cream over the mixture. Top with grated cheese. Bake at 350 degrees until cheese is melted and mixture bubbles. Enjoy!

Corn Casserole
(serves 6-8)
This recipe can easily be doubled or tripled!

One 15 1/4 oz. can of whole kernal corn, drained
One 14 1/4 oz. can cream style corn
One 8 oz. pkg. of Jiffy corn muffin mix
1 cup Sour cream (regular or light)
1/2 cup (1 stick) melted butter

In a large bowl, stir together the two cans of corn, corn muffin mix, sour cream and melted butter. Pour into a lightly greased casserole dish. Bake at 350 degrees for 45-60 minutes, or until golden brown. Enjoy!

PS: This is one of the most requested recipes from my friends, and it is great to take to large gatherings as you can make LOTS of it easily!

Low Country Cookies-I've never made them!

Low Country Cookies by Paula Dean

Ingredients
Low Country Cookies

Recipe courtesy Paula Deen
Prep Time: 15 min Inactive Prep Time: 30 min Cook Time: 10 min Level: Easy Serves: 15 to 20 servings
Ingredients

Filling:
1 (16-ounce) box graham crackers
12 tablespoons (1 1/2 sticks) butter
1 cup sugar
1 egg
1/2 cup milk
1 cup chopped pecans
1 cup or 3 (1/2-ounce) cans shredded coconut

Topping:
2 cups powdered sugar
1 teaspoon vanilla
4 tablespoons (1/2 stick) butter
3 tablespoons milk
Instructions

For the filling: Line a 13 by 9-inch pan with whole graham
crackers. Melt the butter in saucepan and add sugar. Beat the egg and milk together; add to butter mixture.
Bring to a boil, stirring constantly. Remove from heat. Add the nuts, coconut, and 1 cup graham cracker
crumbs. Pour over the crackers in the pan. Cover with another layer of whole graham crackers.

For the topping: Beat all the ingredients together and spread over top layer of crackers.

Chill. Cut into squares.

Taco Soup (just like Chili but it's Weight Watchers!)

Here's another Crocpot Recipe that I make a lot in the Fall and Winter.
So easy and makes a lot!
It's just like Chili but it's a Weight Watchers recipe, believe it or not!

Taco Soup
Combine 1 lb. cooked hamburger
1 large chopped Vidalia onion (or bagged frozen)
1 can undrained kidney beans
1 can fat-free refried beans
1 can chili beans
1 16oz. can of corn
1 16oz. can of chopped tomatoes
1 15oz. can tomato sauce
1 can rotel (regular type)
1/2 to 1 pkg. taco seasoning
1 pkg. Hidden Valley Ranch Dressing Mix (not dip mix)

Cook in crockpot all day-5 to 6 hours usually.
