recipe exchange

hey ladies! i thought that we could exchange some recipes. post as many as you want!
here is a low-fat muffin recipe:

2 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons groud cinnamon
2 teaspoons groud nutmag
2 eggs, beaten (i do 3 egg whites instead)
1 cup pumpkin puree
1/4 cup sugar (i use splenda instead!)
2 cups unsweetened applesauce
2 tablespoons vegetable oil
1 teaspoon almond extract

preheat oven to 350. in mediom bowl mix flour, soda, powder, nutmeg and cinnamon. set aside. in another bowl mix remaining ingredients. slowly add flour mixture to this bowl. mix until just blended. pour into 18 muffin cups. bake for 25-30 min. let cool. enjoy! oh, it is also yummy to spread some no sugar added coolwhip on it!

this one is not so healthy! but so good!

garlic Crusted Chicken:

4 chicken breasts
2 teaspoons crushed garlic
1/4 c. olive oil
1/4 c. bread crumbs
1/4 c. grated parm chz.

saute garlic in olive oil. mix the cheese and breadcrumbs in medium bowl. on wax paper pound chicken, then dip in olive oil and coat w/ chz.-bread crumbs mixture. place in shallow dish and bake for 30-35 min. on 400.

marinara sauce:
2 cans whole peeled tomatoes
1 can tomato paste4 tablespoons olive oil
4 cloves garlic (minced)
1/4 c. fresh chopped parsley
1/2 tablespoon salt
1/2 cup red wine

in medium bowl blend tomotoes and paste. set aside. in large sauce pan heat the olive oil and garlic. add tomotoes and stir for 10 minutes. add parsley, salt and wine and simmer until sauce thickens.

pour sauce over chicken and you can top w/ mozzerella cheese! serve over a bead of pasta. yummy!!!

OMG YUMMYYYYYYY I am making the chicken one!!!
ok here is one!

15 chicken tenders
1 can condenced cheese soup
1 can condenced cream of celery soup
1/4 cup milk
10 carrots cut up
1 1/2 cup peas boiled if fresh or 1 can of peas
1 onion diced
1/2 stick of butter
1 package puffed pastry thawed (2 sheets)

boil the chicken till cooked then cut in bite size pieces
pre-heat oven to 425 deg
in large skillet mix both soups and milk and stir. Cook till soft boil

in 9X13 pirex pan
place the puffed pastry use 1/2 of the butter on the bottom of the pastry lined pan

in skillet add peas, carrots onions and chicken mix all together and heat until warm and all coated with soup mix.
place all of the mixture in pastry lined pan
take other puffed pastry and cover the top of the mixture.
cut air holes in top of pastry and put rest of butter on top in cube size bits.

Bake for 35-40 minutes.

The best chicken pot pie in the world!!!!!!!

Manicotti Mingo

I put a twist on regular stuffed manicotti. It's the Robinator's favorite meal outside of gumbo! LOL!

3 packages frozen, chopped spinach
3 pounds ground sirloin
2 (8-ounce) packages cream cheese, softened
2 large onions, chopped
Grated Parmesan (6 ounces)


Grated Romano (6 ounces...I like the way this cheese tastes with spinach)
Salt, black pepper, garlic powder & cayenne pepper


Creole Seasoning
1 (1-pound) package manicotti shells

1 big can (28 oz) of diced tomatoes (drain and puree in blender)


Place ground sirloin and onions in a large skillet and brown. Season with salt, peppers and garlic powder. Prepare manicotti according to package directions. Drain and place manicotti on a plate not overlapping so it doesn't stick to each other.

Put spinach in colander and thaw under hot water. Squeeze out excess water. Add spinach, parmesan cheese and cream cheese to ground meat and mix well over low heat. Sprinkle with Creole seasoning.


Stuff manicotti with mixture (I use a long handled ice tea spoon) and place in a baking dish big enough to hold all of them. Pour pureed (is that a word?) diced tomatoes over manicotti (I seasoned the sauce with cayenne pepper and Creole seasoning) and sprinkle with Romano cheese. Cover with aluminum foil and bake for 1 hour. at 350 degrees.

OMG that sounds good and I just got home from dinner and a margarita or how ever you spell it! But that sounds good! will try that one maybe on Thuray! I have the chicken pot pie with best friend to look forward to tomorrow!
